With the ale styles I've been making lately the ferment is peaking on day 3 and adding anything wouldn't be a good idea. I add honey at the end of the boil when I'm adding flavor hops, it dissolves easily and doesn't get cooked. Gee, I never thought of that and probably wouldn’t recommend it.
